11 Gallon Natural Gas Commercial Pasta Cooker - 70,000 BTU

The kitchen crew loves the ability to cook more at one time, and the griddle is used constantly. My only complaint is that, although the oven reaches a true temperature according to the oven thermometers, the ovens take longer to cook than a residential oven and longer than most recipes call for. The other thing, which wasn't a big deal, is that to light the pilots on the griddle you have to light both sides by hand the first time. Have a long lighter ready, and don't let gas build up under the griddle before you get a flame in there. After it's lit the first time, all is good, and all the other pilots are easy to access. Overall, there are really no important issues. We love it, it looks good, and it sure beats the two electric residential ovens we were using before. It's easy to clean if you keep up with it after every use, and the kitchen staff are treating it like a beloved relative.
